SNICKERDOODLE COOKIES 
1 c. butter
1 1/2 c. sugar
2 eggs
2 3/4 c. flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt

Roll in balls and dip in mixture of: 2 tbsp. cinnamon

Bake at 400 degrees for 8-10 minutes.

My ideal snickerdoodle is kind of like eating a donut hole, and every other recipe I looked at wasn't puffy enough. There aren't really directions here, so I creamed one stick of salted butter with one of unsalted, and added the eggs to that. I mixed all the other ingredients in another bowl (3 teaspoons of baking powder, since my baking soda is apparently expired), then combined them, kneading it together like bread dough and then chilling it, along with a greased cookie sheet. I kept everything in the fridge between batches, and used a teaspoon of dough for each cookie. I cooked each batch for eight minutes at 400, and got exactly the soft, puffy cookies I had wanted, crispy on the bottom, light and chewy in the center. At the size I used, the yield is insane. In my case, 109 cookies.
