WESTERN BEEF AND CORN CASSEROLE | |
1 lb. ground beef 1/2 tsp. chili powder 1/2 c. hickory-flavored or reg. barbecue sauce 1 can (8 oz.) tomato sauce 1/2 tsp. salt 1 c. shredded Cheddar, American cheese 1 (12 oz.) can whole kernel corn, drained Mix together and pour into crust. CRUST: 1 c. all-purpose flour 2 tbsp. sugar 1 tsp. baking powder 1 beaten egg 1 c. shredded cheese 1/2 c. yellow corn meal 1 tsp. salt 1/2 c. milk 1 c. butter Brown ground beef and drain. Stir in the remaining filling ingredients and set aside. To make crust, stir together flour, corn meal, sugar, salt and baking powder. Cut in butter. Blend in crust ingredients, except 1/2 cup cheese. Spread crust mixture over bottom and sides of a greased (not oiled) 10 inch square pan. Pour filling into crust. Bake at 400 degrees for 25 to 30 minutes. Sprinkle with reserved cheese during last few minutes of baking. Yield: 6 to 8 servings. |
