SOUFFLED CORN 
2 (12 oz.) cans whole kernel corn
1/2 c. butter
1/2 c. sugar
1 tbsp. flour
1/2 c. evaporated milk
2 eggs, well beaten
1 1/2 tsp. baking powder

TOPPING:

1 lb. melted butter
1/4 c. sugar
1/2 tsp. cinnamon
OR
Grated Cheese

Preheat oven to 350 degrees. In a medium saucepan heat 1/2 cup butter with 1/2 cup sugar until butter is melted. Stir in flour until well blended. Remove from heat. Gradually stir in milk. Add eggs and baking powder; mix well. Fold in corn. Turn into buttered 1 quart dish. Bake 40 minutes.

Top with either one:

Brush with melted butter sprinkle with sugar and cinnamon.

OR

Top with grated Cheddar cheese put back in oven until melted.
