SUMMER SQUASH CASSEROLE 
1 lb. summer squash, sliced and steamed (squeeze out extra juice)
1/2 c. chopped onion
1/2 c. sour cream
1/2 can cream of chicken soup
1/2 c. grated carrot

Mix all ingredients together. Make 1 package Stove Top stuffing mix according to directions on package. Cover bottom of 13 x 9 x 2 inch pan with 1/2 of stuffing, spread squash mixture over stuffing and top with rest of stuffing. Bake at 350 degrees for 35 minutes or until bubbly.
