EGGPLANT CASSEROLE 
1 eggplant, peeled, sliced, then cubed
4 cloves garlic, crushed
1/2 med. onion, chopped
1 stalk celery, sliced
1/2 bell pepper (green), chopped
8-10 mushrooms, sliced
1 lg. jar of your favorite spaghetti sauce (28-32 oz. or more)

Mix all ingredients in casserole dish, cover and bake in oven at 325 degrees for approximately 45 minutes or until eggplant is soft. You can add other vegetables such as zucchini, tomato, other squashes. The only fat is in the spaghetti sauce.
