AUNT VIOLA'S PICKLED BEETS 
1 gallon beets
2 c. sugar
1 long stick cinnamon
3 1/2 c. vinegar
1 1/2 c. water
2 tbsp. pickling spices (wrapped in white cloth so only the flavor is released)

Cook beets until tender. Dip in cold water and peel skin off. Simmer other ingredients 20 minutes. Add beets and cook 5 more minutes. Put in sterile jars and seal.
