GRANDMA BAILEY'S BEET PICKLES 
About three bunches of beets
1 c. sugar
1 c. vinegar
1/3 c. water
1 tsp. salt
Spices, I use whole cloves about 2 tbsp.

Wash and boil beets until tender. Cool and peel and slice. Put above in saucepan a bring to a boil. Pour over beets. Let stand overnight before using. Will keep for months in refrigerator or may be canned.
