CHICKEN LASAGNE | |
4 chicken breast on bone 1 lb. mushrooms, cooked & sliced 2 pkgs. frozen broccoli or 1 lg. stock fresh 6 oz. shredded Mozzarella cheese 1/2 pkg. of ziti 2 c. heavy cream (or 1 c. milk + 1 c. cream) 2 c. broth from fry pan 1 c. Parmesan cheese 3-4 heaping tbsp. flour 3/4 c. butter 1/2 c. white wine 1 clove garlic, chopped Salt and pepper Prep. for chicken: Put 4 chicken breasts (with bone) in frying pan. cover chicken halfway with water, salt and pepper to taste. Add garlic and wine. Simmer covered for 45 minutes. Save broth. Parboil ziti and mushrooms; drain, put aside. Sauce (lg. saucepan) : Make sure everything is measured and ready to go. Melt butter and add flour to get a thick paste, LOW HEAT. Add cream and milk; add broth, turn up to medium-high (make sure it doesn't stick to bottom). When it thickens, add Parmesan cheese; bring to boil, then take off heat. Add chicken and mushrooms. Now get a casserole dish. Bottom layer of Ziti only. Layer broccoli, sauce, broccoli, sauce, etc. When they are gone, sprinkle with Mozzarella cheese. Cook at 350 degrees for 25-35 minutes. Freezes nicely. |
