BAKED BLUEFISH 
2 lbs. thick bluefish
4 tbsp. melted butter
2-4 fresh tomatoes, depending on size
1 tsp. sugar
1 lg. sweet white onion
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. heavy cream

Place fish, skin side down, in a foil-lined baking dish. Pour melted butter over it. Arrange tomato slices on top and then sprinkle with sugar.

Put onion slices over the tomatoes. Sprinkle with salt and pepper. Cover with the cream. Bake at 375 degrees for 25-30 minutes. Serves 4.

Wonderful on the Vineyard in late summer or early fall when garden tomatoes are at their best and the Blues are running.
