WILD RICE WITH MUSHROOMS 
1/3 c. plus 1 tbsp. butter
1 tbsp. onion
8 oz. mushrooms
2 c. chicken broth or beef stock
1 c. wild rice, well washed
1 tsp. salt

Saute onion and mushrooms in butter. In a separate pan, bring broth to boil. Add sauteed onions and mushrooms, wild rice, and salt. Stir well. Reduce heat and simmer about 1 hour.
