CHEF LEE'S BREAD PUDDING 
3 eggs, beaten
1 1/2 c. white sugar
2 tbsp. brown sugar
1/2 tsp. nutmeg
1/2 stick butter, melted
3 c. cream
Dash yellow food coloring, optional
4 c. cubed day-old bread
3/4 c. raisins

SAUCE:

1 beaten egg
3 tbsp. brown sugar
1/2 c. white sugar
2 tbsp. melted butter
1 tbsp. flour
1 tsp. vanilla
1 1/4 c. cream

Pudding: 1. Combine eggs, sugars, vanilla and nutmeg.

2. Add melted butter, then cream, then coloring and mix well.

3. Stir in cubed bread and raisins; let stand 10-15 minutes.

4. Pour into well greased deep pan or casserole. Bake at 375 degrees for 45-60 minutes, until golden brown.

5. Serve warm, topped with Butter-Vanilla Sauce. (6-8 servings.)

Sauce: Combine ingredients in top of double boiler. Cook, stirring until thickened.
