LACE COOKIES 
Follow recipe carefully - do not substitute.

1 cup (2 sticks) butter
1 lb. light brown sugar
2 1/4 cups quick-cooking oatmeal
3 tbsp. all-purpose flour
1 tsp. salt
1 egg, slightly beaten
1 tsp. vanilla

Preheat oven to 375°F.

Melt butter in 2-quart saucepan. Add brown sugar and stir with large spoon. Add remaining ingredients and stir well. Drop by level measuring teaspoon onto well buttered cookie sheet.

Bake at 375°F about 5 minutes, watching closely until golden brown. Let cool 30 seconds and remove with spatula onto racks to cool.

May be stored in airtight containers in the freezer.

Makes about 10 dozen cookies.

I love these cookies! This recipe, however, did not make 10 dozen for me, more like half that... maybe mine were bigger... maybe 3-inches across. Parchment paper is a huge factor in good results... without parchment paper, they tend to stick to the cookie sheet and will mess up. With the paper, they just slide off! Enjoy!!!!

This is the easiest and BEST recipe! My only comment is that instead of vanilla, I added almond extract. I think the flavor is much better. Make sure you put only half a teaspoon on the cookie tray. They spread like you wouldn't believe. I brought them to a party and everyone wanted the recipe and I was taking numbers so I could send it to them. That's how good this recipe is!! You won't be sorry you made them.
