QUICK HONEY DIJON MUSTARD
CHICKEN
 
3 tbsp. honey
3 tbsp. Dijon mustard
1/4 c. white wine or dry sherry
1 tbsp. lemon juice
2 whole chicken breasts, skinned, boned & split

Blend honey, mustard, wine and lemon juice in small mixing bowl. Arrange chicken breasts slightly apart in a baking dish. Pour above mixture over meat and bake, uncovered in a 400 degree oven for 20 minutes. Good served with rice.

I just made this for my husband and I, and it turned out so much better than I anticipated. I was expecting a dry tasteless chicken entree. When I tried it I was shocked! It was tender, moist, juicy, and FULL of wonderful honey dijon flavor. The only thing I think may have added to that extra flavor was that I let the chicken sit in the honey dijon sauce while I prepared a veggie dish. It sat for about 15 minutes before I put it in the oven. I also cooked it for about 27 minutes instead of 20. I am paranoid about undercooking my meats. Anyway, I will definitely be making this again, and in a larger quantity. I will probably even serve this to guests as well.
