STIR FRY STEAK 
1 lb. lean sirloin or round steak
3 tbsp. oil
1 lb. spinach, chopped
1 sm. bunch celery, chopped
1 bunch scallions, chopped
1/2 lb. mushrooms, chopped
1/2 c. soy sauce
1/2 can Chinese veggies, strained
4 carrots, cut in paper thin slices
2 tbsp. sugar
1/2 c. chicken stock
3 c. vermicelli or cellophane noodles, cooked

Freeze meat until stiff. Slice thinly across the grain. Heat oil in wok. Brown quickly. Add veggies, sugar, soy sauce and chicken stock. Stir until all are coated. Cook 5 to 10 minutes until veggies are tender. Strain and remove meat and veggies from sauce. Add cooked noodles. Heat in sauce. Arrange all on a platter and serve. Serves 4.
