ZUCCHINI BEEF CASSEROLE 
1 lb. ground beef
1 1/2 lb. zucchini, sliced and cooked
1 1/2 lb. American or cheddar cheese, grated
1 can cream of mushroom soup
1 sm. onion, chopped
1 clove garlic, minced
Progresso bread crumbs

Saute beef, onions, and garlic until brown. Layer in greased dish starting with zucchini, then cheese, then meat mixture. Pour undiluted soup on top. Put bread crumbs on top. Bake 45 minutes at 350 degrees or 1 hour at 300 degrees.
