ZUCCHINI SOUP 
2 lbs. zucchini
1 c. scallions
6 tbsp. butter
1/2 tbsp. curry
1/2 tbsp. cumin
2 c. chicken broth
3 c. buttermilk
Salt & pepper to taste

Step 1: Steam zucchini and scallions until soft, approximately 15 minutes.

Step 2: Add spices and butter, cook for 2 minutes and add broth.

Step 3: Puree in blender a little at a time.

Step 4: Add buttermilk and chill 4 hours.

Step 5: Serve garnished with thin sliced radish, carrot and zucchini.
