OLD FASHIONED MEAT LOAF 
3/4 c. finely chopped onion
1/4 c. finely chopped celery
1 clove garlic, minced
3/4 tsp. thyme leaves
1 tsp. oil
1/2 tsp. lite salt or less
1/4-1/2 tsp. pepper
1 c. finely chopped mushrooms (preferably chopped in a food processor)
1/2 lb. ground beef (10 percent fat)
1/2 lb. ground turkey
1/2 c. fresh bread crumbs
2 egg whites
5 tbsp. chili sauce or ketchup, divided
1 (8 oz.) can unsalted tomatoes, drained and chopped
1/3 c. minced parsley

In a skillet cook the onion, celery, garlic, and thyme in the oil over moderately low heat, stirring, until the onion is soft. Add lite salt, pepper and mushrooms, and cook the mixture over moderate heat, stirring, for 5-10 minutes, or until the mushrooms are tender and the mushroom liquid is evaporated. Transfer the mixture to a large bowl and let it cool.

Preheat oven to 350 degrees. To the bowl add ground beef, ground turkey, bread crumbs, egg whites, 2 tablespoons of the chili sauce, drained tomatoes, and parsley and stir until it is combined well. Shape the mixture into an oval loaf in a shallow baking pan and spread the remaining 3 tablespoons chili sauce over it. Bake for 45 minutes or until done. Serves 6.
