OLD FASHIONED MEAT LOAF 
1 sm. onion
1 clove garlic
2 eggs
1 1/2 lbs. ground beef
1/2 c. dry bread crumbs
1/4 c. tomato puree
2 tbsp. chopped fresh parsley
1 tsp. salt
1/2 tsp. dried thyme
Pinch cayenne pepper
3 slices bacon

Heat the oven to 350 degrees. Chop the onion and garlic. In a large bowl beat the eggs lightly to mix. Add all the ingredients except the bacon and mix well. Pack the mixture into a loaf pan and cover with bacon slices. Bake until browned, 1 hour to 1 hour and 15 minutes. Let set 10 minutes before slicing and serving. Can add sliced green peppers and mushrooms if desired to mix before baking. 12 slices.
