OLD FASHIONED BREAD PUDDING 
1/4 c. raisins
3 slices whole wheat bread
2 eggs
1 1/2 c. skim milk
3/4 tbsp. vanilla
1/2 c. sugar
1/2 tsp. cinnamon or nutmeg

Lightly oil a 6x8 baking dish. Sprinkle half of raisins over bottom. Cut or break bread into small pieces and arrange in baking dish. Scatter remaining raisins on top.

In large bowl beat eggs, add milk, vanilla and sugar. Beat well. Pour over bread. Sprinkle with cinnamon on top and let stand 10 minutes.

Preheat oven 350 degrees. Bake 30-35 minutes or until the custard is set. 4 servings.
