PINEAPPLE - PUMPKIN MUFFINS 
1 lg. egg
1/2 c. pumpkin
1/2 c. milk
1/4 c. (1/2 stick) butter, melted
1/2 c. drained, crushed pineapple
1 1/2 c. all-purpose flour
2 tsp. baking powder
2/3 c. sugar
3/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 c. brown sugar

In large bowl, combine egg, pumpkin, milk, butter, pineapple, flour, baking powder, sugar and spices. Mix well. Spoon into greased muffin tins, almost to the top. Sprinkle tops with brown sugar. Bake at 425°F for 20 to 25 minutes.

Makes 12 muffins.
