CARROT CASSEROLE 
1 1/2 lbs. carrots, sliced (4 1/2 c.)
1/2 c. mayonnaise or salad dressing
2 tbsp. chopped onion
2 tbsp. prepared horseradish
1/4 tsp. salt
Dash of pepper
1/4 c. crushed saltine crackers (7 crackers)
2 tsp. melted butter

Cook sliced carrots in boiling, salted water until tender crisp. Place in shallow casserole.

Mix mayonnaise, onion, horseradish, salt and pepper in small bowl. Spread over top of carrots. Add crushed saltines to melted butter. Sprinkle on top. Bake, uncovered, at 350 degrees for 30 minutes.
