DELICIOUS CARROTS 
1 1/2 lb. carrots, thinly sliced
1/4 c. golden raisins
1/4 c. butter
3 tbsp. honey
1 tbsp. lemon juice
1/4 tsp. ground ginger
1/4 c. sliced almonds, optional

Cook carrots, covered, in 1 inch of water for 8 minutes. Drain. Put carrots in 1 quart baking dish. Stir in raisins, butter, honey, lemon juice and ginger. Bake uncovered in preheated oven 375 degrees for 35 minutes. Stir occasionally. Put in serving dish and sprinkle with almonds.
