SWEDISH RICE PUDDING 
3/4 c. rice
4 c. milk
4 eggs, separated
1 tbsp. cornstarch
1/2 c. sugar
1/2 tsp. salt
1 tsp. vanilla

Boil rice in 8 cups boiling water with 1 teaspoon salt 20 to 25 minutes. Rinse in cold water. Let milk come to boil. Add rice, sugar and cornstarch, then beaten egg yolks. Let come to boil again. Put in an 8"x8" baking dish. Cover with meringue (4 egg whites, beaten and 6 tablespoons sugar). Bake 20 minutes in 350 degree oven.
