ORANGE AND RAISIN CAKE 
1 orange (with peel), ground fine
1 c. raisins, ground fine
1/2 c. shortening or oil
1 c. sugar
1 c. buttermilk
1 egg
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
2 c. flour

Mix ground orange and raisins. Add shortening, sugar, buttermilk, egg, and vanilla; mix soda, salt, and flour and then add to raisin mixture. Bake in 3 (8 or 9 inch) cake pans at 350 degrees until done. Test with toothpick. Cool and frost.

MAPLE FROSTING:

1/4 c. milk
3/4 c. brown sugar, packed
1/4 c. butter
1/4 tsp. salt
1/2 tsp. maple flavoring
1 lb. powdered sugar

In saucepan, combine milk and brown sugar. Bring just to boil, stirring constantly. Pour over butter in mixing bowl and beat until well blended. Add maple flavoring and salt. Gradually add powdered sugar, little at a time, beating well after each addition (if frosting should stiffen too quickly, add a few drops of milk). After all the powder sugar has been added, beat hard for 2 minutes.

This cake will keep in freezer real well.
