NEW YORK PASTRY CRUST | |
1 c. plain flour 1/4 c. sugar 1 1/2 tsp. grated lemon rind 1/2 tsp. vanilla essence 1 egg yolk 1/4 c. butter Mix together the flour, sugar, lemon rind and vanilla in a bowl. Add the egg yolk and butter and blend until the mixture forms a ball. Put into a plastic bag or wrap in wax paper and chill for about 1 hour. Divide the dough into quarters. Butter a 9 inch springform pan. Separate the bottom from the sides. Roll one quarter of the dough directly on the bottom of the pan. Trim the edges. Bake in a 400 degree oven for about 10 minutes or until golden brown. Cool. Roll out the remaining quarters and fit on the sides of the pan pressing the edges together. Trim the top edge. Chill in the refrigerator. |
