5-HOUR BEEF STEW 
1 1/2 - 2 lbs. beef stew meat, cut bigger than bite size, do not brown
1 c. each of celery, carrots & onions
3 potatoes, quartered
1 1/2 c. tomato juice or V-8 juice
2 tbsp. minute tapioca over meat
Season to taste

In a large baking dish place meat on the bottom. Add carrots, onions and celery. Place potatoes on top. Pour juice over top of potatoes and cover tightly and bake 5 hours at 250 degrees.

Nice meal to put in oven, go shopping and come home to a good hot meal. Proportion the vegetables to the size of your family, you may want more carrots than celery.
