CINNAMON CUCUMBER RINGS 
Use overgrown cucumbers usually thrown away. Cut into rings, peel, and remove seeds.

Step 1:
2 gallons cucumber rings
2 c. pickling lime
8 1/2 c. water

Step 2:
1 c. vinegar
1 tbsp. alum powder
1 sm. bottle red food coloring

Step 3:
2 c. vinegar
5 lb. sugar (10 c.)
1 c. red hot cinnamon candy
2 c. water
8 cinnamon sticks
8 cloves

Combine Step 1 and soak 24 hours. Drain and wash cucumbers well. Cover with clean water and let stand 3 hours. Drain. Put cucumber in large pot, cover with water, add Step 2 ingredients. Simmer 2 hours. Drain and discard liquid. Heat Step 3 ingredients.

Make sure candy is melted. Pour liquid over cucumber and soak overnight. Frost next 2 days, drain off liquid and reheat, but do not boil and pour over cucumbers. On 3rd day, heat syrup, pack in jars and seal.
