1 c. sugar 1 c. butter 1 c. brown sugar 1 egg 1 c. vegetable oil 1 c. reg. rolled oats 1 c. crushed cornflakes 1/2 c. shredded coconut 1/2 c. chopped pecans 3 1/2 c. sifted all-purpose flour 1 tsp. baking soda 1 tsp. salt 1 tsp. vanilla extract Preheat oven to 325 degrees. Cream together butter and sugars until light and fluffy. Add egg, mixing well. Add oats, cornflakes, coconut, and nuts. Then add flour, soda, and salt. Mix well. Form into balls the size of small walnuts. Place on ungreased cookie sheet and flatten with a fork which has been dipped in water. Bake for 12 minutes. Allow to cool a few minutes before removing from cookie sheet. Makes 8 dozen. |
