CHEESE & RICE CASSEROLE 
3 c. cooked brown rice
3 green onions, chopped
1 c. low-fat cottage cheese
1 tsp. dried dill weed
1/4 c. grated Parmesan cheese
1/2 c. skim milk

Combine rice, green onions, cottage cheese, dill weed, Parmesan and milk in mixing bowl; mix thoroughly. Spray 1 1/2 quart baking dish with non-stick coating and put in rice mix. Bake in preheated 350 degree oven for 15 to 20 minutes or heated through. Dietary exchange: 1 starch, 1 protein.
