APRICOT CHICKEN BREASTS 
3 chicken breasts, halved, skinned, boned
1/4 c. apricot preserves (made with fruit juice - no sugar)
1/4 c. Russian dressing (low fat or fat free)
2 tbsp. white wine
1/2 tsp. ground coriander
1/8 tsp. each salt and pepper

Place chicken in Pam sprayed 8 x 12 inch baking dish. Combine remaining ingredients and pour over chicken. Bake uncovered in 350 degree oven for 30 minutes or until chicken is tender.
