CHICKEN WITH APRICOT WINE GLAZE 
6 chicken breasts, skinned (and boned optional)
1/4 tsp. salt
1/4 tsp. pepper
1 tbsp. butter
3/4 c. apricot preserves
1/4 tsp. garlic powder
1/2 c. dry white wine

Preheat oven to 350 degrees. Season chicken with salt and pepper. Place in oven proof casserole dish. Top each breast with 1/2 teaspoon butter. Bake chicken, uncovered for 15 minutes (30 minutes if not boned).

Combine preserves, wine and garlic. Spoon over chicken and bake 45-60 minutes, basting. You may wish to substitute orange marmalade or any other favorite preserves. Serves 6.
