ANGEL FOOD CAKE 
12 egg whites
1 c. and 2 tbsp. sifted cake flour
3/4 c. sugar
1/2 tsp. salt
1 1/2 tsp. cream of tartar
1 tsp. vanilla
1 c. sifted sugar
1 tsp. almond extract

Sift together (4 times) flour and 3/4 cup sugar. Then sift 1 cup sugar into another bowl. In large bowl combine egg white, salt, cream of tartar, vanilla and extract. Beat until whites are stiff peaks.

Rapidly sprinkle in sifted sugar for 1 minute, scraping bowl gently. Turn mixer to low. Sprinkle in sifted flour evenly and quickly scraping bowl in folding motion for 1 1/2 minutes.

Fold mixture a couple of times then pour into ungreased angel food cake pan. Bake at 375 degrees for 45 minutes. Turn upside down to cool then cut around pan to remove.
