CHICKEN RICE SALAD WITH CASHEWS 
3 c. cooked, diced chicken
1/2 c. diced celery
2 thinly sliced green onions
3 c. cooked rice
1/2 c. mayonnaise
1/2 c. yogurt
1 tbsp. lemon juice
1/2 tsp. salt
1/2 c. cashews
1 tbsp. honey

Combine chicken, celery, onion, and rice in a large bowl.

In small bowl, combine mayonnaise, yogurt, lemon juice, salt, and honey. Pour dressing over mixture. Toss lightly but thoroughly. Adjust seasonings. Chill. Just before serving line a bowl with lettuce leaves. Put salad into bowl with leaves, sprinkle cashews over top.
