CHICKEN SALAD WITH CASHEWS 
3 c. chicken
1/2 c. celery
2 green onions
3 c. cooked rice (brown or white rice)
1/2 c. mayonnaise
1/2 c. plain yogurt
1 tbsp. lemon juice
1 tsp. honey
1 tsp. salt
1/2 c. cashews

Combine chicken, celery, onion and rice in large bowl. Combine mayonnaise, yogurt, lemon juice, honey and salt. Mix well and pour dressing over chicken mixture and toss lightly but thoroughly. Cover and place in refrigerator for 2 hours. Add cashews before serving.
