PORK CHOPS WITH ORANGE RICE 
6 pork chops
Salt and pepper
2/3 c. rice
1 tbsp. sugar
1/4 c. raisins
1 tbsp. grated orange rind
1 1/2 c. boiling water
6 orange slices
3 tsp. brown sugar

Brown pork chops well; drain off fat. Season with salt and pepper. Mix rice, 3/4 teaspoon salt, sugar, raisins and grated rind in a 3-quart casserole. Add water; place in 350 degree oven for 10 minutes. Remove from oven; stir rice.

Lay chops on top of rice. Top each chop with slice of orange and 1/2 teaspoon brown sugar. Bake at 350 degrees for 45 minutes to 1 hour or until chops are tender. Yield 6 servings.
