CHILI-CON-TURKEY 
2 tbsp. vegetable oil
1 c. chopped onion
1 c. chopped celery
1 clove garlic, minced
1 1/4 lbs. ground turkey
1 (15 oz.) can tomato sauce
2 tsp. ground cumin
1 (15 oz.) can pinto or red kidney beans
Salt and pepper to taste
2 tsp. mild chili powder

1. In medium skillet over low heat, heat oil and saute onion, celery and garlic until onion is golden. Add turkey. Raise heat to medium and saute until turkey is no longer pink. Stir to break up meat into small pieces.

2. Add tomato sauce, chili powder and cumin; stir. Bring to boil, reduce to low, cover and simmer 20 minutes. Stir occasionally.

3. Mix in beans, salt and pepper to taste. Cover and simmer 30 minutes longer. Rest 5 minutes before serving. Top with minced onion and grated Cheddar cheese. Serve with crackers or over plain white rice.
