MINI ZUCCHINI CUPCAKES 
4 eggs
1 1/2 c. corn oil
3 c. sugar
3 c. grated zucchini
3 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt
1 c. nuts, raisins or mini chocolate chips

Beat eggs until fluffy. Add oil, sugar and zucchini. Mix well. Sift together flour, baking powder and soda, cinnamon and salt. Add to zucchini mixture. Blend well. Stir in nuts, raisins or chocolate chips.

Pour mixture into mini or regular size paper baking cups. Set in muffin tins. Bake mini cupcakes 10-15 minutes; regular size 15-20 minutes; oven at 350 degrees.
