SLOPPY JOES 
1 lb. ground chuck
1/2 c. chopped onion
1/4 c. chopped celery
2 cloves garlic, minced
1 (8 oz.) can no-salt-added tomato sauce
1 (6 oz.) can no-salt-added tomato paste
1 tbsp. vinegar
2 tsp. sugar
1/2 tsp. dry mustard
1/2 tsp. salt
3 English muffins, split and toasted

Combine ground chuck, onion, celery and garlic in a 2 1/2 quart baking dish. Cover and microwave at high for 5 1/2 to 6 1/2 minutes or until meat is no longer pink, stirring every 2 minutes. Drain and pat dry with paper towels. Wipe pan drippings from dish with a paper towel. Return meat to baking dish; stir in tomato sauce and next 5 ingredients. Cover and microwave at high for 3 to 4 minutes or until thoroughly heated, stirring once. To serve, place 1/2 cup meat mixture over each English muffin half. Yield: 6 servings (277 calories per serving).

Since microwave ovens vary in power, you may need to adjust your cooking time.
