POOR MAN'S FRUIT CAKE 
2 1/2 c. flour
2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. cloves
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 1/2 c. sugar
1 c. chopped nuts
1 c. applesauce
1 c. raisins
1/4 c. lard or Crisco
1 c. sugar
1 tbsp. cornstarch
1 tbsp. cornmeal
2 lemons, grated (whole)
6 oz. coconut

Mix and sift dry ingredients, add nuts and raisins, then applesauce and melted lard (Crisco). Mix well and pour into 2 (8"x8") pans (greased and floured). Bake at 325 degrees for 45 minutes to 1 hour. For filling, cook sugar, cornstarch, cornmeal and water until thickened, then add lemons and coconut. Let boil again, spread on cake while hot.
