STUFFED CHICKEN WITH SPINACH
(STOVE TOP STUFFING)
 
1 pkg. chicken cutlets, pounded
2 (10 oz.) pkgs. frozen chopped spinach, thawed and drained
1 pkg. stove top stuffing, prepared (4 serving size)
1/2 to 1 cup shredded Mozzarella cheese, for sprinkling
1/2 cup bread crumbs, for sprinkling

SAUCE:

1/2 cup mayonnaise
1 (10 oz.) can cream of chicken soup
1 tsp. lemon juice
1 tsp. curry powder (or to taste)
1 tsp. garlic powder
1/4 cup grated Parmesan cheese

Preheat oven to 350°F. Spray baking dish with non-stick cooking spray (Pam).

Place spinach on bottom of baking dish. Put ball of stuffing in chicken and roll. Place stuffed chicken on top of spinach, seam side down.

Mix sauce ingredients and pour over chicken (if sauce is too thick, add water to loosen). Sprinkle Mozzarella cheese over dish. Sprinkle bread crumbs over cheese.

Bake at 350°F for 45 to 50 minutes.
