EASY ITALIAN EGGPLANT 
1 lg. eggplant, peeled
1/2 stick melted butter
Seasoned Italian bread crumbs
Spaghetti sauce, about 16 oz.
Sliced Mozzarella cheese, 8 oz.
Oregano

Slice eggplant into 1/3 to 1/2 inch thick slices (cut crosswise). Dip slices in butter and then bread crumbs. Sprinkle slices with oregano if desired. Spoon spaghetti sauce on top of each slice. Top eggplant with a slice of cheese. Place eggplant in a 400 degree oven for about 15-20 minutes or until cheese is slightly brown.

I really liked the simplicity of the recipe. The crosswise slices always seem to come out better than cutting eggplant lengthwise. I added garlic salt and pepper to the oregano sprinkle. I also left the peel on. Wonderful. It's a keeper.
