PEAR HONEY 
12 c. ground pears
8 c. sugar
1 (No. 2) can crushed pineapple
1 lemon
4 (1 inch) sticks ginger

Peel and core pears and run through coarse knife of food chopper. To 12 cups ground pears, use 8 cups sugar and crushed pineapple. Cook pears about 15 minutes in large flat pan in the oven. This keeps them from turning dark. Add 1 lemon, sliced paper thin, and 4 sticks ginger. Cook until thick, stirring occasionally. Lift out ginger and discard. Ladle pear honey into hot sterilized jars and seal. Makes 6 pints.
