MARY ANN'S BELL PEPPERS | |
5 lg. stuffing bell peppers 1 lg. onion, chopped 1 1/2 lb. lean ground beef 1/2 c. raw rice 1 egg Salt and pepper 2 sm. cans tomato sauce 2 tbsp. olive oil 3 c. water Core out tops of bell peppers with serrated knife, remove seeds. Wash, set in pot of boiling water. Remove peppers. In medium bowl, mix meat, rice, salt, egg, chopped onion. Stuff into bell peppers. In heavy iron pot saute oil with onion until lightly sauteed. Add tomato sauce, salt, water. Set bell peppers right side up. Cook 1 1/2 hours basting sauce over top. Check to make sure sauce is abundantly enough. |
