PEAR MINCEMEAT 
7 lb. ripe pears (about 14 to 21 med.)
2 c. raisins
1 tbsp. cloves
1 tbsp. ginger
1 tbsp. nutmeg
1 c. vinegar
1 lemon
6 c. sugar

OPTIONAL INGREDIENTS:

1 lg. orange, juice and rind
1 tsp. cinnamon
1 tsp. allspice

Core and slice pears; cut lemon in quarters and remove seed. Put pears, lemon and raisins through coarse blade of food chopper. Combine remaining ingredients in large kettle. Add chopped fruit and simmer 40 minutes. Pour boiling hot into sterilized pint jars leaving 1 inch head space. Close, process 25 minutes in boiling water bath. Makes about 8 or 9 pints.
