BROCCOLI-CHICKEN CASSEROLE 
5 whole chicken breasts
3 cans cream of chicken soup
1 1/2 c. mayonnaise
1 tsp. curry powder
3 (10 oz.) pkgs. broccoli spears
1 1/2 tbsp. lemon juice
6-10 oz. Cheddar cheese
Cornflake crumbs and butter

Stew chicken and cut into bite size pieces. Cook broccoli, drain, cut into bite size pieces. Mix soup, mayonnaise, juice and curry. Stir into chicken and broccoli. Put in greased pan. Grate cheese and cover top. Bake 50 minutes at 350 degrees covered and 10 minutes uncovered. Add crumbs and butter last 10 minutes. MAKE DAY BEFORE you serve. Set out 1-1 1/2 hours before cooking.

I've made this for decades - It's great. However instead of cornflake crumbs, I brown bread crumbs in a little butter then add the grated cheese just before sprinkling it on top of casserole. Then I bake it covered with aluminum foil. I take off the foil for the last 15 minutes of baking time just to brown the cheese - fabulous.
