ORZO SALAD | |
1 lb. pkg. Orzo, cooked, cooled 1 can mandarin oranges 1 can pineapple chunks 1 c. sugar 1 lg. Cool Whip 1 can fruit cocktail 1 can crushed pineapple 2 eggs 2 tbsp. cornstarch Drain fruits. Save juice. Reserve a few cherries and oranges for garnish. To juice, add eggs (beaten), sugar, and cornstarch. Bring to boil, remove and cool. Combine orzo, fruit, and juice mixture. Add Cool Whip. Refrigerate. Garnish with reserved cherries and oranges. Makes a large bowlful. (Cooked rice may be substituted for orzo). |
