ORANGE-GINGER CHICKEN | |
2 lg. chicken breasts, boned and skin removed 1/2 c. orange juice 1/2 c. Kikkoman low sodium soy sauce 1 tsp. powdered ginger 1 med. onion, chopped 1/2 tsp. pepper 1/4 c. honey Rinse the chicken with water and cut into 1-inch cubes. Combine the remaining ingredients and pour over the chicken in a shallow bowl. Cover and let marinate in the refrigerator at least 2 hours. To cook. Place chicken and marinade in a ovenproof casserole. Bake covered at 375 degrees for about 20-25 minutes or until chicken is tender. Serves 2. |
