SAUSAGE UPSIDE DOWN CORN BREAD 
1 lb. bulk sausage
1 c. chopped onion
1/2 c. chopped green pepper
2 tbsp. all-purpose flour
1 c. tomato paste
1 tsp. chili powder
Salt and pepper to taste
4 oz. cheese in sm. cubes
1 c. sliced or chopped olives
2 pkgs. corn muffin mix or 1 batch corn bread

Cook sausage, onion, pepper in skillet until sausage is brown and crumbly. Stir in flour, mix in tomato pate and spices. Remove from heat; stir in cheese and olives. Spread evenly in a 9-inch square pan.

Mix up muffin mix or corn bread, spread over sausage mixture. Bake at 350°F for 30 to 35 minutes. Let stand 5 minutes. Loosen edges. Turn over onto plate for upside down corn bread.

Serves 6.
