MICROWAVE - PINEAPPLE CHICKEN 
1 (20 oz.) can pineapple chunks
Water
2 tbsp. soy sauce
1/4 c. packed brown sugar
2 tbsp. cornstarch
1/2 tsp. ginger
1 lb. boneless chicken, cut into bite-size pieces
1 green pepper, cut into 1" pieces

Drain juice from pineapple chunks, reserving fruit. Add water to juice to yield 1 cup. Add soy sauce, sugar, cornstarch and ginger. Blend thoroughly. Place chicken in a 2 quart casserole and pour pineapple liquid over top. Cover and microwave on high 5 minutes. Stir in peppers, cover and microwave on high 5 minutes. Stir in pineapple chunks, cover and microwave on high 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
