MEXICAN CASSEROLE 
4-5 frozen flour tortillas
1 lb. ground beef
1/2 c. chopped green pepper
1/2 c. chopped onion
1 env. taco seasoning mix
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1/2 c. sliced ripe olives
1/4 c. water
1/2 tsp. chili powder
1 c. sour cream
2 eggs
1/4 tsp. pepper
2 c. broken corn chips
2 c. shredded Monterey Jack cheese

Cook or saute onions and peppers until tender. Add ground beef, cook, drain. Add water, taco seasoning, tomato sauce, paste, olives and chili powder. In separate bowl, mix sour cream, eggs and pepper. In an 8"x12" dish, start with 2 tortillas, 1/2 meat mixture, 1/2 sour cream mixture. Repeat layers. Sprinkle with corn chips and cheese. Bake at 350 degrees for 20 minutes or until cheese melts.
